Baked Chicken With Tomatoes, Basil And Red Chillies

I thought it was something that looks like as it was the very main dish on the table at first glance...

I mean, a kind of special main dish of baked chicken pieces with vegetables in a large pan seems to make you spend more time preparing the meal in the kitchen.

Anyway while it does look like main dish to me, I'm surprised and excited that this yummy looking baked chicken with tomatoes is actually very quick to prepare and easy to make! It just that chicken arranged in the pan with tomatoes, basil and red chillies then just hit the oven.

It's a great oven baked chicken recipe if you think of preparing easy baked chicken that works in any ways whether you want to prepare the meal as the main dish or the other in a dinner with family, in any occasions with family and friends or to be served to guests!

Good thing is just throw everything into the pan in 6 minutes. It still comes out very good although the oven isn't done preheating yet. Simply hit into oven and you'll have easy oven baked chicken for your dinner ready in 45 minutes to an hour.

So, the ingredients that you'll need for the baked chicken recipe are...

3.5 Ibs. skinless bone-in chicken thighs (about 8)
1 pint grape tomatoes
1-2 red chillies, sliced (don't even bother to remove the seeds)
15 large basil leaves (torn up a bit) plus 10-12 smaller ones for garnish
1 Tbsp. olive oil
1 tsp. salt
1/2 tsp. coarse black pepper

Next, here are the things you'll need to know on how to bake chicken...

Preheat oven to 425F.

Arrange chicken pieces in a single layer in a large rimmed pan or baking dish (12" cast iron skillet). Topple in the tomatoes. Skatter everything with the chillie slices and the 15 large basil leaves. Drizzle with the olive oil and sprinkle with salt and pepper.

Bake until chicken is cooked through, about 45 minutes to an hour. The chillies and basil leaves will be blackened. But they taste good, don't worry. Scatter the remaining 10-12 basil leaves over top before serving.
